The Limerick

1 oz HDC Char Barrel Finished Soft Gin
1/2 oz fresh Lime Juice
1/2 oz Basil Simple Syrup
Basil leaf garnish

Combine Gin, lime, and basil simple syrup in a shaker with ice. Shake and strain into chilled glass. Garnish with fresh Basil leaf.

Basil Simple Syrup:
Combine 2 Cups of super fine sugar (Bakers sugar) with 2 Cups of water in a pot. Heat until sugar dissolves stirring occasionally.
Meanwhile, blanch one large bunch of basil - Dredge leaves in boiling water for 20 seconds then immediately place in ice bath for 1 minute.
Pick off blanched basil leaves and add to a blender with water sugar mixture. Blend for 1 minute then strain using a cheese cloth and sieve.
Store in the refrigerator for 1-2 weeks.
