Justin and I just got back from an awesome trip to the Sichuan province of China. We went with the World Trade Center Tacoma and the Tacoma Chamber as part of a delegation trip to start working on moving HDC into the global market. We had a plethora of great meetings and awesome meals including one American style meal at Peter's Tex Mex in Chengdu.
The owner, Peter is 35 years old and owns a total of 21 restaurants in China including 18 Tex Mex locations, 2 Thai style, and 1 pancake house. We were lucky that Peter was there during our meal and we were able to spend some time getting to know him and his businesses. Peter was gracious enough to let us pull out some bottles and have his staff experiment by making this Hibiscus Mango Margarita complete with house made Raspberry Sorbet.
Peter shared the recipe with us which I'm excited to reproduce in the near future:
Peter's Tex Mex (Chengdu) Hibiscus Mango Margarita:
1.5 oz HDC Hibiscus Vodka
3-5 pieces frozen mango
2-3 pieces fresh orange or 1/4 cup fresh squeezed orange juice
Blend until smooth.
Finish with a big scoop of raspberry sorbet and garnish with lime.
